  • 1 cupshredded sharp cheddar cheese
  • 2 tablespoonsdiced pimentos

Method
 

Instructions
  1. Preheat oven to 450°F and spray a baking sheet with cooking spray.
  2. In a large bowl, stir together 2 1/4 cups White Lily self-rising flour, 1 tablespoon sugar, 1/4 to 1/2 teaspoon black pepper, and 1/4 teaspoon cayenne pepper until evenly combined.
  3. Add 1/4 cup mayonnaise and 1 cup whole milk to the dry ingredients and stir gently until just combined; do not overmix.
  4. Fold in 1 cup shredded sharp cheddar cheese and 2 tablespoons diced pimentos until evenly distributed, mixing only until incorporated.
  5. Drop the batter by heaping tablespoons onto the prepared baking sheet, leaving about 2 inches between each drop.
  6. Bake for 10 minutes, or until the tops are light golden.
  7. Remove from the oven, brush the tops with melted butter, and serve warm.
