  • 5 cups water (plus more for cooking)
  • 3.5 cups sugar
  • 1 unit lemon (juice only)

Method
 

Instructions:
  1. Step 1: Prepare the Grapefruits - Thoroughly wash the grapefruits, cut them in half, juice them, and reserve the juice and peels.
  2. Step 2: Slice the Peels - Slice the reserved peels into thin strips to infuse the marmalade with flavor.
  3. Step 3: Cook the Peels - In a large pot, boil the peels in water for about 30 minutes, then drain and reserve the cooking liquid.
  4. Step 4: Combine Ingredients - Return the peels to the pot, add grapefruit juice, cooking liquid, sugar, and lemon juice; stir to combine.
  5. Step 5: Cook the Marmalade - Bring to a boil, then simmer for 30-45 minutes until it reaches 220°F (104°C).
  6. Step 6: Test for Doneness - Use the plate method to check if the marmalade holds its shape.
  7. Step 7: Jar the Marmalade - Pour into sterilized jars, seal, and let cool completely.
