Ingredients
  

For the Poppy Chow:
  • 9 cups Plain Popcorn
  • 1 cup Semisweet Chocolate Chips high-quality
  • 1/2 cup Creamy Peanut Butter smooth, no-stir variety
  • 1/4 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract fresh
  • 1 cup Powdered Sugar

  1. Start by popping your popcorn. You can use an air popper, stovetop method, or microwave popcorn bags, but make sure to use plain popcorn. Once popped, measure out 9 cups, and place it in a large mixing bowl.
  2. In a microwave-safe bowl, combine 1 cup of semisweet chocolate chips, 1/2 cup of creamy peanut butter, and 1/4 cup of unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth. This should take about 1-2 minutes total.
  3. Once your chocolate and peanut butter mixture is smooth, stir in 1 teaspoon of vanilla extract. This will enhance the flavor and aroma of your Poppy Chow.
  4. Pour the melted chocolate mixture over the popcorn in the large mixing bowl. Using a rubber spatula, gently fold the popcorn and chocolate mixture together until every kernel is well-coated.
  5. Sprinkle 1 cup of powdered sugar over the coated popcorn. Again, gently fold to distribute the powdered sugar evenly across the popcorn. This will give it a nice sweetness and help to create a light coating.
  6. Line a baking sheet with parchment paper (if using) and spread the coated popcorn evenly across the sheet. Allow it to cool completely, which will help the coating to set.
