Instructions
- Start by popping your popcorn. You can use an air popper, stovetop method, or microwave popcorn bags, but make sure to use plain popcorn. Once popped, measure out 9 cups, and place it in a large mixing bowl.
- In a microwave-safe bowl, combine 1 cup of semisweet chocolate chips, 1/2 cup of creamy peanut butter, and 1/4 cup of unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth. This should take about 1-2 minutes total.
- Once your chocolate and peanut butter mixture is smooth, stir in 1 teaspoon of vanilla extract. This will enhance the flavor and aroma of your Poppy Chow.
- Pour the melted chocolate mixture over the popcorn in the large mixing bowl. Using a rubber spatula, gently fold the popcorn and chocolate mixture together until every kernel is well-coated.
- Sprinkle 1 cup of powdered sugar over the coated popcorn. Again, gently fold to distribute the powdered sugar evenly across the popcorn. This will give it a nice sweetness and help to create a light coating.
- Line a baking sheet with parchment paper (if using) and spread the coated popcorn evenly across the sheet. Allow it to cool completely, which will help the coating to set.
- Once cooled, break apart any clumps and serve your delicious Poppy Chow [Chocolate & Peanut Butter-Covered Popcorn]. Store any leftovers in an airtight container to keep them fresh.
Notes
- Store leftovers in an airtight container at room temperature for 3-5 days.
- You can use different types of chocolate for variety.
- Add nuts or dried fruit for extra flavor and texture.
