- Preheat oven to 375ºF. Line a baking sheet with parchment paper or lightly grease it.
- Place ½ cup butter in a microwave-safe bowl and microwave on HIGH for 40–45 seconds or until the butter is melted.
- Add ½ cup packed brown sugar, ½ cup granulated sugar, the 1 egg (lightly beaten), and 1½ tsp vanilla to the melted butter. Stir or beat until the mixture is smooth and combined.
- Stir in 1½ cups all-purpose flour until a dough forms. Fold in 1½ cups chopped pecans.
- Using a small cookie scoop or teaspoon, drop rounded portions of dough onto the prepared baking sheet about 2 inches apart.
- Bake for 8–10 minutes, until the edges are slightly brown.
- Let cookies cool on the baking sheet for 2 minutes, then transfer them to a cooling rack. When cooled to your preference, sprinkle cookies with powdered sugar.
