Ingredients
  

For the Dough:
  • 1.5 cups whole wheat flour
  • 0.5 cup vanilla protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 0.25 cup applesauce
  • 0.25 cup neutral flavored oil
  • 1 teaspoon vanilla extract
For the Filling:
  • 0.5 cup strawberry jam
For the Glaze:
  • 1 cup confectioners sugar sugar-free recommended
  • 1 cup vanilla protein powder optional
  • 2 tablespoons milk or water
  • 0.5 teaspoon vanilla

Method
 

Directions:
  1. In a large mixing bowl, combine the whole wheat flour, vanilla protein powder, sugar, and baking powder. Mix well until all dry ingredients are evenly distributed.
  2. In a separate bowl, whisk together the applesauce, neutral oil, and vanilla extract. Make sure everything is well incorporated.
  3. Pour the wet mixture into the dry ingredients and mix until a dough forms. If the dough feels too dry, add a little water until you can easily handle it.
  4. On a floured surface, roll out the dough to about 1/4-inch thickness. Use a cookie cutter or knife to cut the dough into rectangles (approximately 3x4 inches).
  5. Place half of the rectangles on a lined baking sheet. Spoon a small amount of strawberry jam onto the center of each rectangle, leaving a little space around the edges.
  6. Place the remaining rectangles over the jam-filled ones. Press the edges with a fork to seal them tightly.
  7. Preheat your oven to 350°F (175°C). Bake the pop tarts for about 15-20 minutes or until they are lightly golden.
  8. While the tarts are baking, mix the confectioners sugar, optional protein powder, milk or water, and vanilla in a bowl until smooth. Adjust the consistency as needed.
  9. Once the pop tarts are out of the oven and cooled slightly, drizzle the glaze over the top. Let it set for a few minutes before serving.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For longer storage, refrigerate for about a week or freeze for up to a month.
  • Reheat in the microwave for 15-20 seconds or in a toaster oven.
