Ingredients
  

  • 8 oz lo mein noodles
  • 1 tablespoon vegetable oil
  • 1 cup bell peppers sliced
  • 1 cup carrots sliced
  • 1 cup snap peas
  • 1 cup broccoli florets small
  • 2 green onions chopped
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger grated
  • salt and pepper to taste

Method
 

Quick Veggie Lo Mein
  1. Fill a large pot with water and bring it to a boil. Add the 8 oz lo mein noodles and cook according to package instructions until just tender. Drain the noodles using a colander and rinse with cold water to stop the cooking process and prevent sticking. Set aside.
  2. While the noodles are cooking, slice the bell peppers and carrots into thin strips. Trim the snap peas and chop the broccoli into small florets. Chop the green onions and mince the garlic. Grate the fresh ginger. Having all your ingredients prepped and ready will make the stir-fry process smooth and quick.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Toss in the bell peppers, carrots, snap peas, and broccoli florets. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  4. Add the cooked noodles to the skillet with the vegetables. Pour in 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Toss everything together gently but thoroughly to ensure the noodles are evenly coated and heated through. Season with salt and pepper to taste.
  5. Sprinkle the chopped green onions over the top and give the dish one last gentle toss. Serve your Quick Veggie Lo Mein immediately for a warm, satisfying meal.
