Ranch Chicken Bites

Crispy, ranch-marinated chicken bites that bake to a golden finish for a quick and flavorful snack or meal.

Ingredients
  

  • 1 lb chicken tenders about 500 g, cut into bite-size pieces
  • 1/4 cup Hidden Valley The Original Ranch dressing
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 1/2 cup panko or breadcrumbs
  • 1/4 cup shredded Parmesan cheese

Method
 

  1. Preheat the oven to 400°F (207°C) and line a baking sheet with parchment paper.
  2. Place the chicken pieces in a bowl and pour the ranch dressing over them; add the pinch of salt and dashes of black pepper, and toss to coat evenly. Marinate briefly while preparing the coating.
  3. In a separate shallow bowl, mix the panko (or breadcrumbs) with the shredded Parmesan until combined.
  4. Working one piece at a time, press each ranch-coated chicken piece into the panko-Parmesan mixture to coat thoroughly, then transfer to the prepared baking sheet, spacing pieces in a single layer.
  5. Bake for 12 to 14 minutes, until the chicken is cooked through and lightly golden brown on the outside.
  6. Remove from the oven and serve immediately with extra ranch dressing if desired.

Notes

  • Use panko for a crunchier coating.
  • Cut chicken into uniform pieces for even cooking.
  • Do not overcrowd the baking sheet to keep pieces crisp.
  • Check internal temperature to ensure chicken reaches 165°F (74°C).
