Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4 large eggs room temperature
  • 2 cups water
  • 1 cup clarified butter
  • 1 pound farmer's cheese
  • 2 large egg yolks
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • Sour cream, applesauce, or your favorite blintz toppings (optional)

Method
 

  1. In a large mixing bowl, whisk together the all-purpose flour and salt. Add the eggs and water gradually, whisking until the mixture is smooth and lump-free.
  2. Heat a non-stick skillet over medium heat and brush it lightly with clarified butter. Pour about 1/4 cup of the batter into the skillet, swirling it around to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the center is set. Carefully flip the crepe and cook for an additional minute. Transfer to a plate and repeat with the remaining batter.
  3. In a separate bowl, combine the farmer's cheese, egg yolks, sugar, and vanilla. Mix thoroughly until you have a smooth and creamy filling.
  4. Take one crepe and place a generous spoonful of the cheese filling in the center. Fold the sides in and then roll it up tightly, similar to a burrito. Repeat this process with the remaining crepes and filling.
  5. In the same skillet, melt a bit more clarified butter over medium heat. Place the filled blintzes seam-side down in the skillet. Cook for 2-3 minutes on each side until they are golden brown and crispy.
  6. Transfer the cooked blintzes to a serving platter and serve warm with your choice of toppings, such as sour cream, applesauce, or fresh berries.

Notes

  • Make sure your eggs are at room temperature for a smooth batter.
  • Resting the batter for 30 minutes can improve the texture of your crepes.
  • If the batter is too thick, add a little more water to reach the desired consistency.
