Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 5 tablespoons butter softened
  • 7 tablespoons unsweetened cocoa powder
  • 2/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1/3 cup plain low-fat yogurt
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking soda, cocoa powder, and salt until well combined. Set aside.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This should take about 2-3 minutes.
  4. To the butter and sugar mixture, add the yogurt and vanilla extract. Mix until well combined, ensuring there are no lumps.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Place the baking sheet in the preheated oven and bake for 10-12 minutes. The cookies should look set around the edges but slightly soft in the center.
  8. Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.
