Method
 

  1. Step 1: Preheat Your Oven - Start by preheating your oven to 400°F (200°C). This high temperature will help achieve crispy potatoes.
  2. Step 2: Prepare the Potatoes - Wash the new potatoes thoroughly under cold water to remove any dirt. Pat them dry with a clean towel. If the potatoes are larger than a golf ball, cut them in half or quarters to ensure even cooking.
  3. Step 3: Season the Potatoes - In a large mixing bowl, combine the potatoes with a generous drizzle of olive oil. Sprinkle with sea salt, ground black pepper, and finely chopped fresh rosemary. Toss everything together until the potatoes are well-coated in the seasoning.
  4. Step 4: Arrange on the Sheet Pan - Spread the seasoned potatoes out in a single layer on a sheet pan. Make sure they have enough space between them; overcrowding will lead to steaming rather than roasting.
  5. Step 5: Roast to Perfection - Place the sheet pan in the preheated oven and roast for about 25-30 minutes. Halfway through, give the potatoes a good shake or flip them with a spatula to ensure they brown evenly.
  6. Step 6: Check for Doneness - After 25-30 minutes, check the potatoes for doneness. They should be golden brown and crispy on the outside while being tender inside. If they need more time, pop them back in the oven for an additional 5-10 minutes.
  7. Step 7: Serve and Enjoy - Once done, remove the sheet pan from the oven, and let the potatoes cool for a few minutes. Serve them warm, garnished with a few extra sprigs of rosemary if desired.
