Ingredients

Main Ingredients

  • 1 pound Pork breakfast sausage Browned and cooked through
  • 10.5 ounces Rotel tomatoes 1 can, not drained
  • 1 pound Velveeta cheese Cut into small cubes
  • 1 cup Cheddar cheese Optional

Garnishes

  • Green onions Sliced, for garnish
  • Tomatoes Diced, for garnish

Instructions

  • Step 1: Brown the beef breakfast sausage in a large skillet over medium heat for 5-7 minutes.
  • Step 2: Drain excess fat from the skillet.
  • Step 3: Add the Rotel tomatoes (including juice) to the skillet and simmer for 2-3 minutes.
  • Step 4: Stir in the Velveeta cheese cubes until melted and blended.
  • Step 5: If desired, add the optional cheddar cheese and stir until melted.
  • Step 6: Serve in a bowl and garnish with green onions and diced tomatoes. Enjoy with tortilla chips!

Notes

For extra spice, add diced jalapeƱos or hot sauce. Store leftovers in an airtight container for up to 3 days.
