Ingredients
  

  • 3 cups rotisserie chicken shredded or cubed
  • 1 cup celery diced
  • 1/2 cup red onion finely chopped
  • 3/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard or wholegrain mustard
  • 1 tablespoon fresh lemon juice freshly squeezed
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper freshly ground
  • 1/4 cup fresh parsley chopped

Method
 

  1. In a large mixing bowl, combine the shredded or cubed rotisserie chicken, diced celery, and finely chopped red onion.
  2. In a small bowl, whisk together the plain Greek yogurt, Dijon (or wholegrain) mustard, freshly squeezed lemon juice, sea salt, and freshly ground black pepper until smooth.
  3. Pour the dressing over the chicken mixture and toss gently until everything is evenly coated.
  4. Stir in the chopped fresh parsley, adjust seasoning if needed, and serve.

Notes

  • Use cooled rotisserie chicken for best texture.
  • Adjust mustard and lemon to taste.
  • Chill briefly before serving if desired.
