Salsa Chicken

A simple baked chicken topped with salsa and melted cheese for an easy weeknight meal.

Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 4 tsp taco seasoning mix
  • 1 cup salsa
  • 1 cup Mexican cheese shredded
  • sour cream to taste
  • cilantro optional, for topping
  • tomatoes optional, for topping

Equipment

  • 9x13 inch Baking Dish
  • Meat Thermometer
  • Spoon

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Place the four boneless, skinless chicken breasts in the prepared baking dish in a single layer.
  3. Sprinkle about 1 teaspoon of taco seasoning over each chicken breast, coating both sides evenly.
  4. Pour 1 cup salsa evenly over the seasoned chicken, covering the tops.
  5. Bake uncovered for 30–35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from the oven, sprinkle the shredded Mexican cheese evenly over the chicken, then return to the oven for 3–5 minutes until the cheese is melted.
  7. Top with sour cream and optional cilantro and diced tomatoes before serving.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F (74°C).
  • Leftover salsa can be used as extra topping.
  • Adjust taco seasoning to taste.
