  • 2 packages chicken sausage 12-ounce, your favorite flavor
  • 2 small red bell peppers
  • 2 small orange bell peppers
  • 2 small yellow bell peppers
  • 1 small red onion
  • 2 tablespoons olive oil
  • 2 teaspoons cornstarch
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper optional
  • 12 tortillas flour 6-inch, lightly steamed
  • ½ cup minced cilantro
  • ½ cup crumbled cotija cheese

Instructions
  1. Step 1: Preheat Your Oven
    Preheat your oven to 400°F (200°C). This high temperature will help the chicken sausage and vegetables roast perfectly.
  2. Step 2: Prepare the Chicken Sausage
    Slice the chicken sausage into bite-sized pieces. This allows for even cooking and a good distribution of flavors.
  3. Step 3: Slice the Vegetables
    Thinly slice the red, orange, and yellow bell peppers and the red onion. Aim for uniform sizes to ensure everything cooks evenly.
  4. Step 4: Season the Mixture
    In a large mixing bowl, combine the sliced chicken sausage and vegetables. Drizzle with olive oil and sprinkle with cornstarch, chili powder, salt, smoked paprika, cumin, oregano, garlic powder, and cayenne pepper if using. Toss everything together until well-coated.
  5. Step 5: Spread on the Sheet Pan
    Transfer the seasoned mixture onto the prepared sheet pan in a single layer. This helps the ingredients roast rather than steam.
  6. Step 6: Roast in the Oven
    Place the sheet pan in the oven and roast for 25-30 minutes, stirring halfway through. Look for the sausage to be browned and the vegetables to be tender.
  7. Step 7: Prepare the Tortillas
    While the fajitas are roasting, lightly steam the flour tortillas to make them pliable. You can wrap them in a damp paper towel and microwave them for about 30 seconds.
  8. Step 8: Assemble and Serve
    Once the fajitas are ready, remove the pan from the oven. Serve the chicken sausage and veggie mixture on the warm tortillas, topped with minced cilantro and crumbled cotija cheese. Enjoy your flavorful feast!

Notes
