Ingredients
  

  • 46 ounce salmon fillets
  • 2 cups broccoli florets
  • 1 cup snow peas
  • 1 cup bell pepper chopped
  • 1 cup carrots sliced into thin strips
  • Sesame seeds for garnish (optional)
Teriyaki Sauce:
  • 1/2 cup light soy sauce or 1/4 cup dark soy & 1/4 cup water
  • 1/4 cup brown sugar
  • 2 garlic cloves minced
  • 1 teaspoon sesame oil optional
  • 1 teaspoon cornstarch

Method
 

  1. Preheat your oven to 400°F (200°C). This high temperature will help to crisp the veggies and caramelize the salmon.
  2. On a large sheet pan, arrange the broccoli florets, snow peas, chopped bell pepper, and sliced carrots. Drizzle with a bit of olive oil, sprinkle with salt and pepper, and toss to coat evenly.
  3. In a mixing bowl, whisk together the light soy sauce, brown sugar, minced garlic, sesame oil (if using), and cornstarch until well combined. This will create a delicious glaze for your salmon.
  4. Place the salmon fillets on top of the prepared vegetables on the sheet pan. Pour the teriyaki sauce over the salmon, ensuring to cover each fillet generously.
  5. Transfer the sheet pan to the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The vegetables should be tender yet crisp.
