Ingredients
  

For the Shrimp Ravioli:
  • 1 pound medium shrimp (51/70-count) peeled and deveined with tails removed (fresh or frozen and thawed)
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 cup low-sodium chicken broth
  • 1 cup nonfat milk
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 package store-bought ravioli Spinach and Ricotta, 4-Cheese, or 5-Cheese recommended
  • ¾ cup finely grated Parmesan cheese or shredded (about 2 ounces)
  • 1 cup frozen green peas thawed
  • 2 tablespoons chopped fresh parsley or basil

  1. Step 1: Prepare the Ravioli - Begin by bringing a medium pot of salted water to a boil. Once boiling, add the store-bought ravioli to the pot. Cook according to the package instructions, usually around 4 to 5 minutes, or until they float to the surface. Once cooked, drain the ravioli in a colander and set aside.
  2. Step 2: Sauté the Shrimp - In a large skillet, heat the extra-virgin olive oil and unsalted butter over medium heat. Once hot, add the peeled and deveined shrimp. Season with kosher salt and ground black pepper. Sauté the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Step 3: Make the Creamy Sauce - In the same skillet, lower the heat and add the chicken broth, scraping up any bits stuck to the bottom of the pan. Gradually whisk in the nonfat milk. In a small bowl, mix the all-purpose flour with a few tablespoons of the broth to create a slurry. This will help thicken the sauce. Slowly pour the slurry into the skillet while continuously whisking.
  4. Step 4: Add Flavor - Stir in the garlic powder, onion powder, and red pepper flakes. Allow the sauce to simmer for about 3-5 minutes until it thickens slightly. Then, add the finely grated Parmesan cheese, stirring until the cheese melts and the sauce becomes creamy.
  5. Step 5: Combine Everything - Return the sautéed shrimp to the skillet, followed by the thawed peas. Gently fold in the cooked ravioli, ensuring they are well coated in the creamy sauce. Cook for an additional minute just to heat everything through.
