Method
 

  1. Gather all your ingredients and let the eggs and milk come to room temperature.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk them together until well combined.
  3. In another bowl, whisk together the low-fat milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined—don’t worry if there are a few small lumps.
  5. Heat your griddle or skillet over medium heat. Lightly grease it with cooking spray or a bit of butter.
  6. Using a tablespoon or small ladle, pour a small amount of batter onto the griddle for each pancake, aiming for about 2-3 inches in diameter. Cook for 1-2 minutes, or until you see bubbles forming.
  7. Carefully flip the pancakes and cook for another 1-2 minutes until golden brown on both sides. Keep warm while cooking the remaining batter.
  8. Stack your Silver Dollar Pancakes on a plate and serve warm with your favorite toppings.
