Simple Chicken Noodle Stir Fry

Ingredients
  

  • 1 tablespoon sesame or peanut oil
  • 8 boneless and skinless chicken thighs, cut into 2-inch pieces or strips
  • 1 large brown onion, sliced
  • 1 head whole broccoli, quartered
  • 1 cup fresh snow peas, washed and string removed
  • 1/2 cup green beans, washed
  • 1 large red capsicum/bell pepper, de-seeded and diced
  • 12 spears baby corn, fresh or canned
  • 2 teaspoons minced garlic
  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 15 oz packet Hokkien noodles, prepared according to package instructions (or any other noodles: Udon, Singapore, etc.)

Equipment

  • Spatula

Method
 

  1. Begin by cooking the Hokkien noodles according to the package instructions. Once cooked, drain and set them aside.
  2. In a large wok or skillet, heat the sesame or peanut oil over medium-high heat. Allow it to get hot but not smoking.
  3. Add the cut chicken thighs to the wok. Stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set aside.
  4. In the same wok, add the sliced onions and minced garlic. Sauté for 2 minutes until fragrant. Then add the broccoli, snow peas, green beans, red capsicum, and baby corn. Stir-fry for another 4-5 minutes until the vegetables are tender but still crisp.
  5. Return the cooked chicken to the wok with the vegetables. Drizzle the oyster sauce, soy sauce, and brown sugar over the mixture. Toss everything together until well-coated and heated through.
  6. Finally, add the prepared Hokkien noodles into the wok. Gently toss everything together until the noodles are well combined with the chicken and vegetables. Cook for an additional 2 minutes.
  7. Remove from heat, dish out your Simple Chicken Noodle Stir Fry into bowls, and enjoy immediately while it’s hot!

Notes

  • For extra flavor, marinate the chicken in soy sauce and garlic for 30 minutes before cooking.
  • Feel free to substitute chicken thighs with chicken breast or tofu for a vegetarian option.
  • Don’t overcrowd the wok; cook in batches if necessary to ensure everything gets that lovely stir-fried flavor.
