Begin by cooking the Hokkien noodles according to the package instructions. Once cooked, drain and set them aside.
In a large wok or skillet, heat the sesame or peanut oil over medium-high heat. Allow it to get hot but not smoking.
Add the cut chicken thighs to the wok. Stir-fry for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set aside.
In the same wok, add the sliced onions and minced garlic. Sauté for 2 minutes until fragrant. Then add the broccoli, snow peas, green beans, red capsicum, and baby corn. Stir-fry for another 4-5 minutes until the vegetables are tender but still crisp.
Return the cooked chicken to the wok with the vegetables. Drizzle the oyster sauce, soy sauce, and brown sugar over the mixture. Toss everything together until well-coated and heated through.
Finally, add the prepared Hokkien noodles into the wok. Gently toss everything together until the noodles are well combined with the chicken and vegetables. Cook for an additional 2 minutes.
Remove from heat, dish out your Simple Chicken Noodle Stir Fry into bowls, and enjoy immediately while it’s hot!
