Skillet Chicken and Veggies

A simple one-skillet meal of bite-size chicken pieces sautéed with potatoes, carrots, onion and fresh herbs.

Ingredients
  

  • 2 boneless skinless chicken breasts cut into bite-size pieces
  • 2 tablespoons extra virgin olive oil
  • 1 onion coarsely chopped
  • 1 red potato medium, peeled and diced
  • 1 carrot large, peeled and thinly sliced
  • 1 garlic clove minced
  • 1 tablespoon balsamic vinegar
  • 1/4 cup basil freshly chopped
  • 1 tablespoon thyme leaves fresh
  • 1/2 teaspoon kosher or sea salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Italian parsley chopped, for garnish

Equipment

  • Large Skillet
  • Knife
  • Cutting Board
  • Spatula or wooden spoon

Method
 

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Add the bite-size chicken pieces and sauté until lightly golden on all sides, about 4–6 minutes.
  3. Add the coarsely chopped onion, diced potato and sliced carrot to the skillet; continue to cook, stirring occasionally, until the vegetables are tender and the chicken is cooked through, about 10–12 minutes.
  4. Stir in the minced garlic, balsamic vinegar, chopped basil and thyme leaves; season with salt and black pepper and sauté for 1 additional minute to combine flavors.
  5. Remove from heat, sprinkle with the chopped Italian parsley, and serve.

Notes

  • Use a large skillet to allow even cooking of chicken and vegetables.
  • Cut chicken and vegetables to similar sizes for uniform cooking.
  • Adjust salt and pepper to taste.
  • Fresh herbs can be substituted with dried at a reduced amount.
