Ingredients

Ingredients
  • 2 large sweet onions peeled and sliced
  • 4 tablespoons butter
  • 2 cups beef broth
  • 4 pieces boneless skinless chicken breasts
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 1.5 tablespoons all-purpose flour
  • 4 slices Provolone cheese
  • 4 slices Mozzarella cheese
  • Fresh parsley chopped, for garnish

Equipment

  • Skillet
  • Plate

Method

  1. Step 1: Caramelize the Onions - Start by placing a large skillet over medium heat. Add the butter and let it melt completely. Toss in the sliced sweet onions, stirring frequently. Caramelize the onions for about 15-20 minutes, until they are beautifully golden brown and tender.
  2. Step 2: Prepare the Chicken - While the onions are caramelizing, take a separate plate and season the chicken breasts with salt, pepper, and dried thyme. Make sure to coat both sides of each breast for an even flavor.
  3. Step 3: Sear the Chicken - Once the onions are done, remove them from the skillet and set aside. Increase the heat to medium-high and add the olive oil. When the oil is hot, sear the chicken breasts for about 5-6 minutes on each side or until they are golden brown and cooked through.
  4. Step 4: Create the Sauce - After the chicken is cooked, sprinkle the all-purpose flour over the chicken in the skillet. Stir it in and cook for about a minute. Gradually pour in the beef broth while continuously stirring to avoid lumps. Bring this mixture to a gentle simmer.
  5. Step 5: Combine & Simmer - Once the broth has thickened slightly, add the caramelized onions back into the skillet. Let everything simmer for about 5-7 minutes.
  6. Step 6: Add the Cheese - Turn on your broiler. Place the Provolone and Mozzarella cheese slices over the chicken and onion mixture. Let it cook under the broiler for about 2-3 minutes, or until the cheese is bubbling and golden.
  7. Step 7: Serve & Garnish - Remove the skillet from the oven and garnish with freshly chopped parsley. Serve hot.

Notes

Use a cast-iron skillet for best results. Don’t rush the caramelization of the onions—they’re key to the dish’s depth of flavor.
