- Step 1: Caramelize the Onions - Start by placing a large skillet over medium heat. Add the butter and let it melt completely. Toss in the sliced sweet onions, stirring frequently. Caramelize the onions for about 15-20 minutes, until they are beautifully golden brown and tender.
- Step 2: Prepare the Chicken - While the onions are caramelizing, take a separate plate and season the chicken breasts with salt, pepper, and dried thyme. Make sure to coat both sides of each breast for an even flavor.
- Step 3: Sear the Chicken - Once the onions are done, remove them from the skillet and set aside. Increase the heat to medium-high and add the olive oil. When the oil is hot, sear the chicken breasts for about 5-6 minutes on each side or until they are golden brown and cooked through.
- Step 4: Create the Sauce - After the chicken is cooked, sprinkle the all-purpose flour over the chicken in the skillet. Stir it in and cook for about a minute. Gradually pour in the beef broth while continuously stirring to avoid lumps. Bring this mixture to a gentle simmer.
- Step 5: Combine & Simmer - Once the broth has thickened slightly, add the caramelized onions back into the skillet. Let everything simmer for about 5-7 minutes.
- Step 6: Add the Cheese - Turn on your broiler. Place the Provolone and Mozzarella cheese slices over the chicken and onion mixture. Let it cook under the broiler for about 2-3 minutes, or until the cheese is bubbling and golden.
- Step 7: Serve & Garnish - Remove the skillet from the oven and garnish with freshly chopped parsley. Serve hot.
Notes
Use a cast-iron skillet for best results. Don’t rush the caramelization of the onions—they’re key to the dish’s depth of flavor.
