Step 1: Prepare the Ingredients. Cut the flank steak or ribeye into 1-inch pieces, ensuring they are uniform for even cooking. Quarter the baby gold potatoes and mince the garlic. Have all your seasonings and butter ready to go.
Step 2: Cook the Potatoes. In a large skillet, heat the olive oil over medium heat. Add the quartered baby gold potatoes and season with salt and pepper. Cook the potatoes for about 10-15 minutes, stirring occasionally until they are golden brown and tender.
Step 3: Add Flavor with Garlic and Butter. Once the potatoes are cooked, push them to one side of the skillet. Add 2 tablespoons of the butter to the empty side of the skillet and melt it. Add the minced garlic, Italian seasoning, and red pepper flakes. Sauté for about 30 seconds until the garlic is fragrant.
Step 4: Cook the Steak Bites. Add the steak pieces to the skillet, seasoning them with salt and pepper. Cook for about 3-4 minutes on each side, or until the steak is browned and cooked to your preferred doneness. Add the remaining tablespoon of butter to the skillet.
