Ingredients

Potatoes

  • 5 pounds Yukon gold or red potatoes Peeled or unpeeled based on preference.

Broth and Seasonings

  • ¾ cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder Or dried minced onion.
  • 4 tablespoons butter Salted or unsalted.
  • ¼ cup sour cream
  • 3 tablespoons cream cheese

Toppings

  • 1 pound bacon Cooked and crumbled.
  • 2 cups cheddar cheese Shredded.
  • cup chives Chopped.

Salt and Pepper

  • Salt To taste.
  • Pepper To taste.

Instructions

  • Step 1: Prepare the Potatoes - Peel and cut the potatoes into 1-2 inch chunks.
  • Step 2: Combine Ingredients in the Slow Cooker - Place potatoes in the slow cooker, add broth, garlic powder, onion powder, butter, salt, and pepper.
  • Step 3: Cook Your Potatoes - Cook on low for 6-8 hours or high for 3-4 hours until fork-tender.
  • Step 4: Mash and Mix - Mash the potatoes to desired creaminess.
  • Step 5: Add Creamy Ingredients - Mix in sour cream and cream cheese until well combined.
  • Step 6: Add the Toppings - Fold in bacon and cheddar cheese, then top with chives.
