Ingredients

Main Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 ounces taco seasoning (about 2 packets)
  • 14 ounces Rotel tomatoes (do not drain!)
  • 1 cup pre-made queso dip
  • ½ cup chicken broth
  • Taco shells or soft tortillas for serving

Optional toppings

  • shredded lettuce

  • sour cream
  • hot sauce or your favorite hot sauce

Instructions

  • Step 1: Prepare the Chicken - Place the chicken breasts at the bottom of your slow cooker.
  • Step 2: Add Seasoning and Ingredients - Sprinkle taco seasoning over the chicken, add Rotel tomatoes, and pour in chicken broth.
  • Step 3: Slow Cook to Perfection - Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • Step 4: Shred the Chicken - Remove chicken and shred using two forks.
  • Step 5: Mix in the Queso Dip - Return shredded chicken to the slow cooker and add queso dip. Stir and cook for an additional 10-15 minutes.
  • Step 6: Serve and Enjoy - Spoon the mixture into taco shells or tortillas and add your favorite toppings.

Notes

For a spicier kick, use spicy taco seasoning or add jalapeños. Customize toppings to your preference.
