Ingredients
  

For the Crostini:
  • 2 tablespoons extra virgin olive oil for drizzling
  • 2 tablespoons melted butter
  • 3/4 cup Greek yogurt
  • 6 tablespoons cream cheese
  • 2 tablespoons fresh chopped dill
  • 1/2 tablespoon fresh lemon juice
  • to taste Salt
  • 4 ounces smoked salmon
  • Capers or fresh dill for garnish

Method
 

Directions:
  1. Preheat your oven to 400°F (200°C). This temperature will give you perfectly toasted crostini.
  2. Slice the thin baguette into 1/2-inch thick slices. Arrange the slices on a baking sheet in a single layer.
  3. In a small bowl, mix the melted butter and extra virgin olive oil together. Brush this mixture generously over the sliced baguette.
  4. Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until the edges are golden and the bread is crispy. Keep an eye on them to avoid burning!
  5. While the bread is toasting, combine the Greek yogurt, cream cheese, chopped dill, lemon juice, and salt in a mixing bowl. Use a spatula to mix everything until smooth and creamy.
  6. Once the baguette slices are toasted and have cooled slightly, spread a generous dollop of the creamy mixture onto each slice.
  7. Top each crostini with a piece of smoked salmon, folding it gently to fit the bread.
  8. Finish off with a sprinkle of capers or a few sprigs of fresh dill for garnish. Serve immediately and enjoy the delightful flavors!
