Smoked Salmon Crostini

Toasted baguette slices topped with whipped chive cream cheese, Nova lox, thin red onion, Everything But the Bagel seasoning and chopped chives.

  • 1 French baguette cut into 1/2 inch slices
  • 1 tablespoonextra virgin olive oil
  • 8 ounceswhipped chive cream cheese
  • 4 ouncesNova lox salmon
  • 1/4 red onion very thinly sliced
  • 1 tablespoonEverything But the Bagel seasoning
  • 1 tablespoonfinely chopped chives or scallions

Method
 

Instructions
  1. Preheat the oven to 350ºF. Arrange the 1/2-inch baguette slices in a single layer on a baking sheet.
  2. Brush the baguette slices with the 1 tablespoon extra virgin olive oil.
  3. Bake the slices 8–10 minutes, or until the edges are lightly golden brown. Remove from the oven and let cool slightly.
  4. While the bread cools, thinly slice the ¼ red onion (if not already sliced) and cut or tear the 4 ounces Nova lox salmon into small pieces or strips.
  5. Divide the 8 ounces whipped chive cream cheese among the toasted slices (about 1 tablespoon per slice) and spread evenly on each crostini.
  6. Top each crostini with pieces of Nova lox, a couple of very thin red onion slices, and a light sprinkle of the 1 tablespoon Everything But the Bagel seasoning, distributing the seasoning evenly.
  7. Finish each crostini with a pinch of the 1 tablespoon finely chopped chives or scallions. Serve immediately.

Notes

Recipe Notes
If you can’t find chive cream cheese, feel free to chop a few tablespoons of chives and mix into softened cream cheese. You can also sub chopped scallions instead!
