Ingredients
  

  • 1 pound lean ground beef
  • 1/2 onion, diced
  • 1 tablespoon taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 can green chiles
  • 2 cups cheddar cheese, shredded
  • 24 small corn or flour tortillas
  • 1/2 cup vegetable oil

Method
 

  1. In a large skillet over medium heat, add the diced onion and sauté for about 2 minutes until it becomes translucent. Add in the ground beef, breaking it apart with a spatula. Cook until browned, which should take about 5-7 minutes. Drain any excess fat.
  2. Once the beef is cooked, stir in the taco seasoning, black beans, and green chiles. Mix well to combine all the flavors. Allow the mixture to simmer for another 2-3 minutes, then remove from heat.
  3. Take a tortilla and place a generous scoop of the beef mixture in the center. Sprinkle with shredded cheddar cheese. Fold the tortilla in half, pressing down gently to secure the filling.
  4. In the same skillet, add vegetable oil and heat over medium-high heat. Once the oil is hot, carefully place the folded tacos in the skillet, cooking in batches if necessary. Fry each side for about 2-3 minutes or until golden brown and crispy. Remove tacos from the skillet and place them on paper towels to drain excess oil.
  5. Serve your Southwest Beef Fried Tacos warm, with your favorite toppings such as sour cream, salsa, or guacamole. Enjoy every crunchy, cheesy bite!
