Southwest Chicken Hummus Wrap

A quick and flavorful wrap filled with chicken, black bean-corn salsa, hummus, and crisp romaine.

Ingredients
  

  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels drained
  • 1/2 cup tomato diced
  • 1/4 cup red onion finely chopped
  • 2 tbsp cilantro chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 tortillas
  • 1 cup rotisserie chicken shredded
  • 8 tbsp red pepper hummus
  • 1 cup romaine lettuce shredded

Method
 

  1. In a mixing bowl, combine the rinsed black beans, drained corn, diced tomato, chopped red onion, chopped cilantro, salt, and black pepper; stir until evenly mixed to make the salsa.
  2. Lay a tortilla flat and spread 2 tablespoons of red pepper hummus in the center.
  3. Spoon a few tablespoons of the black bean-corn salsa over the hummus.
  4. Top with about 1/4 cup shredded rotisserie chicken and 1/4 cup shredded romaine lettuce.
  5. Fold the sides of the tortilla over the filling and roll it up like a burrito to enclose the filling.
  6. Repeat with the remaining tortillas and serve immediately.

Notes

  • Omit the chicken for a vegetarian wrap.
  • Substitute taco meat or steak if preferred.
