Ingredients
  

  • 1 pound turkey sausage casings removed
  • 4 cups kale washed and chopped (stems removed for tenderness)
  • 2 medium apples diced (a sweet-tart variety like Fuji or Honeycrisp works best)
  • 1 onion diced (yellow or sweet onion)
  • 2 cloves garlic minced
  • 4 cups whole grain bread cubed (day-old bread works wonderfully)
  • 1 teaspoon dried sage (or fresh if available)
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cinnamon (adds that cozy autumn vibe)
  • salt and freshly ground black pepper to taste
  • 2 cups chicken broth (low sodium preferred to control seasoning)

Method
 

  1. Begin by heating your skillet over medium heat. Add the turkey sausage, breaking it apart with your spoon as it cooks. Let it brown evenly, about 6-8 minutes, until no pink remains.
  2. Push the cooked sausage to one side of the skillet. On the empty side, add the diced onion and minced garlic. Sauté for 3-4 minutes until softened and fragrant. Then, stir in the diced apples and cook for another 3 minutes.
  3. Toss the chopped kale into the skillet, stirring it with the sausage, onions, and apples until it begins to wilt. Sprinkle in the sage, thyme, cinnamon, salt, and pepper. Stir everything together to evenly coat the ingredients.
  4. Add the whole grain bread cubes to the skillet. Pour in the chicken broth and gently stir to combine. Let the mixture cook for about 5-7 minutes, stirring occasionally to prevent sticking and to allow flavors to meld.
  5. Reduce the heat to low and cover the skillet with a lid or foil. Let the stuffing simmer gently for another 5 minutes to allow the kale to fully tenderize and the bread to absorb all the delicious juices. Remove from heat and serve warm.

Notes

  • Use slightly stale bread for best texture; fresh bread can become too mushy.
  • Adjust broth quantity depending on desired moisture level.
  • Add a pinch of red pepper flakes when cooking sausage for a spicier kick.
