Ingredients
  

  • 1 cup sliced red pepper adds sweetness and color
  • 1 cup sliced yellow pepper brings a bright flavor and crunch
  • 1/2 cup sliced squash offers tender texture and mild taste
  • 1 large broccoli head packed with nutrients
  • 3 tablespoons olive oil for roasting the vegetables
  • 1 teaspoon salt to season the vegetables
  • 1/2 teaspoon pepper for a touch of warmth
  • 1 box Horizon Classic Mac the star of the dish
  • 2 tablespoons Sriracha for a spicy kick
  • 1/2 cup bread crumbs adds a satisfying crunch on top
  • 1/4 cup finely grated Parmesan cheese for a cheesy finish

Method
 

  1. Preheat your oven to 400°F (200°C) to ensure even cooking.
  2. In a mixing bowl, combine the sliced red pepper, yellow pepper, squash, and broccoli. Drizzle with olive oil, then sprinkle with salt and pepper. Toss to coat.
  3. Spread the seasoned vegetables on a baking sheet in a single layer. Roast for about 20 minutes, or until tender.
  4. While the vegetables are roasting, prepare the Horizon Classic Mac according to package instructions. Drain and set aside.
  5. In a large baking dish, mix the cooked macaroni with the roasted vegetables. Stir in Sriracha.
  6. Sprinkle bread crumbs and Parmesan cheese evenly over the top.
  7. Bake for an additional 15 to 20 minutes, until the top is golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving. Enjoy warm!

Notes

  • For a milder version, reduce the Sriracha or use a mild hot sauce.
  • Add shredded cheese into the macaroni for extra cheesiness.
  • For gluten-free, substitute regular breadcrumbs with gluten-free ones.
