  • ½ cup vanilla Greek yogurt plain Greek yogurt or sour cream may be substituted
  • 3 tablespoons canola or vegetable oil
  • 1 tablespoon vanilla extract
  • 2 tablespoons BAILEYS Coffee Creamers Sweet Italian Biscotti or French Vanilla
  • About 1 ½ cups confectioners sugar

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease your 9-inch round cake pan with oil or non-stick spray.
  3. Step 3: In a medium mixing bowl, whisk together the flour, sugar, baking powder, and a pinch of salt.
  4. Step 4: In a separate bowl, whisk together the egg, BAILEYS Coffee Creamers, yogurt, oil, and vanilla extract until smooth.
  5. Step 5: Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  6. Step 6: Transfer the batter into the prepared cake pan and smooth the top.
  7. Step 7: Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Step 8: Let the cake cool in the pan for 10 minutes before transferring to a cooling rack.
  9. Step 9: Whisk together the confectioners sugar and 2 tablespoons of BAILEYS Coffee Creamers for the glaze.
  10. Step 10: Drizzle the glaze over the cooled cake.
