Ingredients
  

  • 5 cups all-purpose flour sifted
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 1/2 cup unsalted butter cut into small pieces
  • 2 1/2 cups buttermilk
  • 1 large egg
  • 2 1/2 cups raisins mixed light and dark
  • 3 tablespoons caraway seeds
  • Turbinado sugar for sprinkling

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, sift together the flour, sugar, baking powder, salt, and baking soda.
  3. Add the butter to the flour mixture and cut in until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the buttermilk and egg. Gradually pour into the dry ingredients, mixing gently.
  5. Fold in the raisins and caraway seeds until evenly distributed.
  6. Shape the dough into a round loaf about 1 1/2 inches thick on a floured surface.
  7. Score a shallow X on top of the loaf with a sharp knife.
  8. Sprinkle turbinado sugar on top for a crunchy crust.
  9. Bake in the preheated oven for 30-35 minutes until golden brown.
  10. Cool on a wire rack for at least 15 minutes before slicing. Serve warm.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • Wrap tightly and freeze for up to 3 months.
  • To reheat, warm in a preheated oven for 10-15 minutes.
