Ingredients
  

  • 1/2 tablespoon olive oil
  • 1/2 cup green bell pepper diced
  • 1/2 medium onion diced
  • 1 jalapeño seeded and diced
  • 1 pound lean ground beef
  • 3/4 cup ketchup
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1 chipotle pepper in adobo sauce minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup salsa
  • 1/2 cup canned corn drained
  • Salt and pepper to taste

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced green bell pepper, onion, and jalapeño. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
  2. Add the lean ground beef to the skillet, breaking it apart with a wooden spoon. Cook until the beef is browned and cooked through, about 7-10 minutes. Drain any excess fat if necessary.
  3. Stir in the ketchup, Worcestershire sauce, garlic powder, minced chipotle pepper, chili powder, ground cumin, paprika, and dried oregano. Mix well to combine all the ingredients.
  4. Fold in the salsa and drained corn. Allow the mixture to simmer on low heat for about 5 minutes, stirring occasionally. This will let the flavors meld together beautifully.
  5. Taste your Tex-Mex Sloppy Joes and season with salt and pepper as needed. Adjust the spice level by adding more chipotle or jalapeño if you desire a bit more heat.
  6. Serve your Tex-Mex Sloppy Joes hot on toasted buns or over rice for a heartier option. Top with shredded cheese, avocado slices, or fresh cilantro, if desired.
