  • 1 cup desiccated coconut (75g)
  • 1 cup granulated sweetener (50g)
  • 2 large eggs (room temperature)
  • 1/2 cup butter (76g, melted and cooled)
  • 1 teaspoon vanilla extract
  • 1.5 teaspoon baking powder
  • 1 large egg yolk (beaten)
  • Shredded coconut (for sprinkling)

Equipment

  • Mixing Bowls
  • Whisk
  • Baking Sheet
  • Parchment Paper
  • Measuring cups and spoons
  • Pastry Brush

Method

  1. Step 1: Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Prepare Your Baking Sheet: Line a baking sheet with parchment paper to prevent sticking.
  3. Step 3: Mix Dry Ingredients: In a bowl, whisk together coconut flour, desiccated coconut, granulated sweetener, and baking powder until well combined.
  4. Step 4: Combine Wet Ingredients: In another bowl, beat the eggs, then add melted butter and vanilla. Whisk until smooth.
  5. Step 5: Combine Wet and Dry Ingredients: Pour wet mixture into dry ingredients and stir gently until just combined.
  6. Step 6: Shape the Dough: Form the dough into a ball and flatten into a 1-inch thick circle. Cut into wedges or use a round cutter.
  7. Step 7: Brush with Egg Yolk: Place scones on the baking sheet and brush tops with beaten egg yolk for a golden finish.
  8. Step 8: Sprinkle with Shredded Coconut: If desired, sprinkle shredded coconut on top for added texture.
  9. Step 9: Bake: Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  10. Step 10: Cool and Enjoy: Let cool on a wire rack and enjoy warm or at room temperature.
