Instructions
- Step 1: Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper or set aside non-stick baking sheets.
- Step 2: In a large mixing bowl, combine the softened butter, brown sugar, and granulated sugar. Using an electric mixer, cream the ingredients together until light and fluffy. This usually takes about 2-3 minutes.
- Step 3: Add in the creamy peanut butter, eggs, and vanilla extract. Mix until fully combined and the mixture is smooth and creamy.
- Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Step 5: If you're adding any optional ingredients like Reese’s Pieces, chocolate chips, or peanuts, gently fold them into the dough using a spatula.
- Step 6: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie, as they will spread while baking.
- Step 7: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will continue to cook on the baking sheet.
- Step 8: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or store them for later!
Notes
- Store cooled cookies in an airtight container at room temperature for up to a week.
- Freeze unbaked cookie dough balls for up to 3 months.
- To reheat, microwave for a few seconds or bake at 350°F for 5 minutes.
