  • 1 tablespoon olive oil
  • 1.25 pounds ground turkey
  • 1 teaspoon salt plus more to taste
  • 1 teaspoon pepper plus more to taste
  • 1 medium yellow onion, peeled and chopped
  • 3 cloves garlic, minced
  • 4 cups baby spinach
  • 28 ounces canned diced tomatoes
  • 2 medium zucchini, cut in half length-wise and sliced
  • 1 teaspoon dried oregano
  • 4 cups chicken stock
  • 9 ounces tortellini pasta

Instructions

  • Step 1: In a large pot, heat the olive oil over medium heat. Add the ground turkey and season it with salt and pepper. Cook until browned, breaking it up into smaller pieces as it cooks, about 5-7 minutes.
  • Step 2: Once the turkey is browned, add the chopped onion and minced garlic to the pot. Sauté for an additional 3-4 minutes, or until the onion is translucent and fragrant.
  • Step 3: Add the zucchini and canned diced tomatoes (with their juices) to the pot. Stir in the dried oregano, mixing everything well. Cook for about 5 minutes.
  • Step 4: Add the chicken stock and bring the mixture to a simmer. Allow the soup to cook for about 10 minutes.
  • Step 5: Add the tortellini to the simmering soup, cooking according to the package instructions (typically around 5 minutes). During the last minute of cooking, add in the baby spinach.
  • Step 6: Serve the warm soup in bowls, garnishing with additional black pepper or a sprinkle of fresh herbs if desired.

Notes

For extra depth of flavor, consider adding some crushed red pepper flakes for a hint of heat.
