Ingredients
  

  • 4 oz tortilla chips crushed
  • 8 oz chicken tenders
  • 1/2 teaspoon salt
  • Ground black pepper
  • 3 dashes smoked paprika
  • 1/2 cup all-purpose flour
  • 1 egg beaten

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Crush the tortilla chips into fine crumbs using a food processor or a zip-top bag and a rolling pin.
  3. In one mixing bowl, combine the all-purpose flour with salt, black pepper, and smoked paprika. In another bowl, beat the egg. Place the crushed tortilla chips in a third bowl.
  4. Coat each chicken tender in the flour mixture, dip in the beaten egg, and roll in the crushed tortilla chips.
  5. Line your baking sheet with parchment paper and place the coated chicken bites on it. Bake for 15-20 minutes, or until cooked through and golden.
  6. Let the chicken bites cool for a few minutes before serving with your favorite dipping sauce.
