Ingredients
  

  • 2 cups quick oats regular or gluten-free
  • 2 tablespoons peanut butter or nut butter your favorite nut butter
  • 15 pitted Medjool dates soaked in warm water
  • 1 cup chopped nuts or seeds almonds, walnuts, or any mix
  • 3/4 cup dried fruit and/or chocolate chips raisins, cranberries, or dark chocolate chips
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon optional
  • 3-4 tablespoons 100% pure maple syrup
  • 1/4 teaspoon sea salt

Method
 

  1. Begin by soaking the pitted Medjool dates in warm water for about 10 minutes. This softens them and makes them easier to blend.
  2. In a food processor, combine the soaked dates, peanut butter (or nut butter), vanilla, and maple syrup. Blend until the mixture is smooth and creamy.
  3. In a large mixing bowl, combine the quick oats, chopped nuts (or seeds), dried fruit, cinnamon (if using), and sea salt.
  4. Pour the date and nut butter mixture into the bowl with the dry ingredients. Stir until everything is well combined. You may need to use your hands to ensure everything is evenly mixed.
  5. Line your baking dish with parchment paper. Transfer the mixture to the dish, pressing it down firmly to create an even layer.
  6. Place the baking dish in the refrigerator for at least 1-2 hours to allow the bars to set. This helps them hold their shape when cut.
  7. Once set, lift the bars out of the baking dish using the parchment paper. Cut into squares or rectangles, and enjoy your homemade Trail Mix Bars!

  • Customize with your favorite mix-ins like different nuts or dried fruits.
  • Store in an airtight container for up to 1 week in the refrigerator.
  • For longer storage, wrap individually and freeze for up to 3 months.
