Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
Step 2: In a medium bowl, whisk together the cake flour, baking powder, baking soda, and salt. Set this mixture aside.
Step 3: In a large mixing bowl, using an electric mixer, beat the unsalted butter and granulated sugar together until light and fluffy, about 2-3 minutes.
Step 4: Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing just until no dry flour remains.
Step 6: Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool for 10 minutes, then turn out onto a wire rack to cool completely.
Step 7: While the cake cools, whisk together the evaporated milk, sweetened condensed milk, and heavy cream in a bowl.
Step 8: Once the cake has cooled, poke holes across the top and pour the milk mixture over it. Allow to soak for at least an hour in the fridge, or overnight for best results.
Step 9: Before serving, top with whipped cream and a sprinkle of ground cinnamon. Cut into squares and enjoy!
