Ingredients
  

For the Burger:
  • 2.5 cups sprouted garbanzo beans (chickpeas) OR canned garbanzos, drained and rinsed
  • 4 large eggs
  • 0.5 teaspoon fine-grain sea salt
  • 1/3 cup chopped fresh cilantro
  • 1 medium onion chopped
  • 1 large lemon grated zest
  • 1 cup micro sprouts chopped (try broccoli, onion, or alfalfa sprouts)
  • 1 cup toasted whole-grain bread crumbs
  • 1 tablespoon extra-virgin olive oil or clarified butter

Method
 

Instructions:
  1. Step 1: Prepare the Beans
    If you're using sprouted garbanzo beans, rinse them thoroughly to remove any debris. If you're using canned beans, drain and rinse them as well to reduce sodium content.
  2. Step 2: Blend the Base
    In a food processor, add the garbanzo beans and pulse until they reach a chunky consistency. You want some texture, so don't over-blend.
  3. Step 3: Mix in the Eggs and Seasonings
    Transfer the blended beans to a mixing bowl. Add in the eggs, salt, chopped onion, cilantro, lemon zest, and micro sprouts. Stir until well combined.
  4. Step 4: Add Bread Crumbs
    Gently fold in the toasted bread crumbs. This will help bind the mixture together and give your burgers a satisfying crunch.
  5. Step 5: Form the Patties
    Using your hands, form the mixture into burger patties. Aim for about 1/2-inch thickness to ensure they cook evenly.
  6. Step 6: Cook the Burgers
    Heat a skillet over medium heat and add the olive oil. Once hot, place the patties in the skillet, cooking for about 4-5 minutes on each side or until golden brown.
  7. Step 7: Serve and Enjoy
    Once cooked, serve the burgers on whole-grain buns with your favorite toppings. Fresh lettuce, avocado, and a dollop of hummus make for excellent choices!

Notes

  • Store leftover patties in an airtight container in the refrigerator for up to three days.
  • You can freeze uncooked patties; layer with parchment paper to prevent sticking.
  • Let patties rest for a few minutes before flipping to avoid breaking apart.
