Prepare the Crust
- Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix well until the crumbs are evenly moistened. Press this mixture firmly into the bottom of your 9x9 inch baking pan to form an even layer. Bake the crust for about 8 minutes, then remove it from the oven and set aside while you prepare the filling.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer on medium speed. Gradually add the sugar, then mix in the vanilla extract. Add the eggs one at a time, beating briefly after each addition until just combined. Avoid overmixing to keep the filling light and smooth.
Assemble the Bars
- Pour the cheesecake filling over the pre-baked crust, spreading it evenly with a spatula. Next, drop spoonfuls of the red fruit jam over the surface of the cheesecake layer. Using a toothpick or skewer, swirl the jam gently into the filling to create a marbled effect. To achieve the “vampire bite” look, create a couple of small circular indentations where the jam pools slightly to mimic bite marks.
Bake to Perfection
- Place the pan back in the oven and bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Avoid overbaking to maintain a creamy texture. Once done, turn off the oven and let the bars cool inside with the door slightly open for about 30 minutes to prevent cracking.
Chill and Garnish
- Refrigerate the cheesecake bars for at least 4 hours, or overnight, to fully set. Before serving, garnish with fresh berries if desired, adding an extra burst of freshness and color that complements the rich flavors.
Notes
- Use a thicker jam or fruit preserve to prevent bleeding and maintain the “bite” effect.
- Make sure the cream cheese is fully softened for a smooth filling.
- Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
- For a seasonal twist, add spices or toppings like cinnamon, peppermint, or chocolate.
- Avoid overbaking to prevent cracks and maintain a creamy texture.
