For the Dip:
  • 1 115-ounce can vegetarian refried beans
  • 1 11-ounce packet taco seasoning mix
  • 1 cup vegan cashew sour cream
  • 1 cup chunky salsa drained
  • 2 cups guacamole store-bought or homemade
  • 3/4 cup diced yellow bell pepper
  • 1/2 cup cherry tomatoes
  • 1 12.25-ounce can sliced olives
  • 3-4 green onions sliced
  • Tortilla chips for serving

Method
 

Directions
  1. Start by mixing the vegetarian refried beans with the taco seasoning mix in a mixing bowl. Stir until well combined and set aside.
  2. Using an offset spatula, spread the seasoned refried beans evenly in the bottom of your pie plate or shallow serving bowl.
  3. Layer the vegan cashew sour cream over the beans and spread it gently.
  4. Spoon the chunky salsa on top of the cashew sour cream layer, spreading it evenly.
  5. Add the guacamole next, spreading it evenly over the salsa layer.
  6. Sprinkle the diced yellow bell pepper and cherry tomatoes over the guacamole.
  7. Finish by scattering the sliced olives and green onions on top.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Make layers ahead and assemble just before serving for best results.
