Ingredients
  

  • 1/2 cup vegan butter (softened, such as Earth Balance)
  • 1/2 cup coconut oil
  • 1/2 cup cocoa powder (sifted)
  • 5 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons almond milk

Method
 

  1. In a mixing bowl, combine the softened vegan butter and coconut oil. Using your hand mixer or stand mixer, beat them together until the mixture is smooth and creamy.
  2. Sift in the cocoa powder to avoid any lumps. Mix on low speed until the cocoa is fully incorporated.
  3. Gradually add the sifted powdered sugar, starting on low speed to prevent a sugar cloud. Once combined, increase the speed and mix until fluffy.
  4. Pour in the vanilla extract and mix to combine.
  5. If the frosting is too thick, add almond milk one tablespoon at a time until you reach your desired consistency.
  6. Taste your frosting and adjust with more powdered sugar or cocoa powder as needed.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Freeze leftovers in small portions for easy use later.
  • Thaw frozen frosting in the refrigerator overnight and re-whip before using.
