Ingredients
  

  • 1 cup Vegetable oil (I used sunflower)
  • 1 cup Dark brown sugar
  • 1 cup Granulated sugar
  • 1 cup Unsweetened apple sauce
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon (optional, but recommended)
  • 2 cups All-purpose flour or GF flour blend
  • 1.5 cups Rolled oats
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 1.5 cups Dark chocolate chips

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: In a large mixing bowl, combine vegetable oil, dark brown sugar, and granulated sugar. Whisk until blended, then add apple sauce and vanilla extract, mixing until smooth.
  3. Step 3: In another bowl, whisk together flour, cinnamon (if using), baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  4. Step 4: Fold in the rolled oats and dark chocolate chips using a spatula until evenly distributed.
  5. Step 5: Using a cookie scoop or tablespoon, drop dough onto lined baking sheets, keeping enough space for spreading. Bake for 12-15 minutes until edges are golden.
  6. Step 6: Let cookies cool on baking sheets for a few minutes before transferring to a wire rack. Enjoy your cookies warm or at room temperature!

Notes

  • Store cookies in an airtight container for up to 5 days.
  • Freeze unbaked dough balls for up to 3 months and bake directly from the freezer.
  • For chewier cookies, use less flour and add an extra tablespoon of apple sauce.
