Ingredients
  

For the Tofu:
  • 16 ounces extra firm or super-firm tofu
  • 2 cups low-sodium vegan chicken broth
  • 1/4 cup all-purpose flour
  • 1 teaspoon Italian seasoning (optional)
  • 1/2 teaspoon salt
  • to taste black pepper
  • 1 tablespoon cornstarch
  • 3/4 cup panko breadcrumbs
  • 1/3-1/2 cup olive oil
  • 1 cup marinara sauce
  • 1/2 cup vegan mozzarella cheese
  • 1/2 cup shredded vegan Parmesan
  • 1/4 cup chopped fresh basil and/or parsley

Cooking Instructions
  1. Step 1: Prepare the Tofu. Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean towel and place a heavy object on top for about 30 minutes. Once pressed, slice the tofu into four thin pieces.
  2. Step 2: Marinate the Tofu. In a shallow dish, combine the low-sodium vegan chicken broth with salt, pepper, and Italian seasoning (if using). Submerge the tofu slices in the broth and let them soak for about 10-15 minutes to absorb the flavors.
  3. Step 3: Set Up Your Breading Station. In one shallow bowl, add the all-purpose flour, cornstarch, and a pinch of salt. In another bowl, place the panko breadcrumbs. This will be your breading station.
  4. Step 4: Coat the Tofu. Take each piece of marinated tofu and first dip it into the flour mixture, ensuring it’s fully coated. Then, transfer it to the panko breadcrumbs, pressing gently to adhere the crumbs. Repeat with all tofu pieces.
  5. Step 5: Fry the Tofu. Heat the olive oil in a skillet over medium heat. Once hot, carefully add the breaded tofu slices. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and place on a paper towel-lined plate to absorb any excess oil.
  6. Step 6: Assemble the Dish. Preheat your oven to 375°F (190°C). In a baking dish, spread a layer of marinara sauce at the bottom. Place the fried tofu slices in a single layer over the sauce, then add another layer of marinara sauce on top. Sprinkle with vegan mozzarella and vegan Parmesan cheese.
  7. Step 7: Bake. Bake the assembled dish in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  8. Step 8: Serve. Once baked, remove from the oven and let it cool slightly. Garnish with chopped fresh basil and/or parsley before serving. Enjoy your Vegan Tofu Parmesan (Parmigiana) with a side of pasta or a fresh salad!
