Vegan White Chocolate Mousse

Ingredients
  

  • 12 oz soft tofu
  • 6 oz vegan white chocolate chips
  • 1 tbsp sweetener of choice

Method
 

  1. Begin by melting your vegan white chocolate chips. You can do this in a microwave-safe bowl, heating in 30-second intervals, stirring in between until smooth. Alternatively, use a double boiler on the stovetop. Once melted, set aside to cool slightly.
  2. In your blender or food processor, add the soft tofu. Blend until it’s completely smooth and creamy, ensuring there are no lumps.
  3. Add the melted white chocolate and your choice of sweetener to the blended tofu. Blend again until all ingredients are well combined and the mixture is fluffy.
  4. Take a moment to taste your mousse. If you want it sweeter, feel free to add more sweetener and blend again to incorporate.
  5. Transfer the mousse into your serving containers or a mixing bowl and cover with plastic wrap. Refrigerate for at least 2 hours to allow it to set and develop its flavors.
  6. Once chilled, remove the mousse from the refrigerator. Serve it in small cups or bowls, and consider garnishing with fresh fruit, nuts, or a drizzle of melted chocolate for that extra touch.
