Directions:
- Step 1: Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.
- Step 2: In a large bowl, toss the cut potatoes with extra-virgin olive oil, Cajun seasoning, garlic powder, dill weed, and onion powder until well-coated.
- Step 3: Spread the seasoned fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through.
- Step 4: While the fries bake, melt unsalted butter in a skillet over medium heat, whisk in flour, and gradually add milk, whisking until thickened.
- Step 5: Remove from heat and stir in freshly grated sharp cheddar cheese until melted and smooth.
- Step 6: Once the fries are done, transfer them to a serving platter and drizzle with the cheese sauce. Add ranch dressing and chives if desired.
- Step 7: Serve immediately while hot!

- Soaking fries in water for 30 minutes enhances crispiness.
