Ingredients
  

For the Fries:
  • 2 tablespoons Extra-virgin olive oil
  • 4 medium Russet potatoes washed and peeled
  • 2 tablespoons Cajun seasoning adjust based on heat preference
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dill weed
  • 1 teaspoon Onion powder
For the Cheese Sauce:
  • 2 tablespoons Unsalted butter
  • 1 tablespoon All-purpose flour
  • 1 cup Milk whole or low-fat
  • 1 cup Sharp cheddar cheese freshly grated
Optional Garnishes:
  • to taste Ranch dressing
  • to taste Chives or green onions for garnish

Method
 

Directions:
  1. Step 1: Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.
  2. Step 2: In a large bowl, toss the cut potatoes with extra-virgin olive oil, Cajun seasoning, garlic powder, dill weed, and onion powder until well-coated.
  3. Step 3: Spread the seasoned fries in a single layer on a baking sheet and bake for 25-30 minutes, flipping halfway through.
  4. Step 4: While the fries bake, melt unsalted butter in a skillet over medium heat, whisk in flour, and gradually add milk, whisking until thickened.
  5. Step 5: Remove from heat and stir in freshly grated sharp cheddar cheese until melted and smooth.
  6. Step 6: Once the fries are done, transfer them to a serving platter and drizzle with the cheese sauce. Add ranch dressing and chives if desired.
  7. Step 7: Serve immediately while hot!

Notes

  • Soaking fries in water for 30 minutes enhances crispiness.
  • Use freshly grated cheese for the best melting quality.
  • Do not overcrowd the baking sheet for even cooking.
