  • 1 tablespoon Olive oil
  • 2 medium Carrots, peeled & diced
  • 2 stalks Celery, diced
  • 1 medium Yellow onion, peeled & diced
  • 2 cloves Garlic, peeled & minced
  • 4 cups Low-sodium beef broth or vegetable broth
  • 28 ounces Canned diced tomatoes
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 4 cups Green cabbage, chopped
  • 3 cups Cauliflower rice (fresh or frozen)
  • 1 cup Green beans, chopped (fresh or frozen)
  • Chopped fresh parsley for garnish

Instructions

  • Step 1: Heat the olive oil in a large pot over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5 to 7 minutes until softened and translucent. Add minced garlic and sauté for an additional minute.
  • Step 2: Pour in the low-sodium broth and canned diced tomatoes. Stir well to combine.
  • Step 3: Add dried basil, oregano, salt, and pepper. Stir to incorporate.
  • Step 4: Add chopped cabbage and cauliflower rice. Stir to combine.
  • Step 5: Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 30 minutes until vegetables are tender.
  • Step 6: In the last 5 minutes, stir in chopped green beans.
  • Step 7: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For extra flavor, consider adding Worcestershire sauce or soy sauce. You can also customize with your favorite vegetables or proteins.
