Start by peeling and segmenting the mandarin oranges. Ensure that all the seeds are removed. Pat them dry gently with a paper towel to remove any excess moisture.
In a microwave-safe bowl, add the chopped dark or milk chocolate. Heat in the microwave in 20-second intervals, stirring in between, until the chocolate is completely melted and smooth.
Using a fork or toothpick, dip each mandarin segment halfway into the melted chocolate. Allow any excess chocolate to drip off before placing them on a baking sheet lined with parchment paper.
In another microwave-safe bowl, repeat the melting process with the white chocolate. Again, heat in 20-second intervals until smooth.
Once the dark or milk chocolate has set slightly, drizzle the melted white chocolate over the dipped mandarin segments using a fork.
If desired, sprinkle coarse sea salt or colorful sprinkles over the chocolate-dipped mandarin segments while the chocolate is still wet.
Place the baking sheet in the refrigerator for about 30 minutes or until the chocolate has fully set.
