  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup white chocolate chips
  • 1/2 cup chopped macadamia nuts
  • 1 cup dried cherries

Method
 

  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, cream together the softened butter, packed brown sugar, and white sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the butter mixture and mix until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
  5. Using a spatula, gently fold in the white chocolate chips, chopped macadamia nuts, and dried cherries.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving about 2 inches between each cookie. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
