Ingredients

  • 1 1/3 cups brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp all spice
  • 3/4 tsp salt
  • 3 cups rolled oats
  • 1 cup raisins
  • 1 cup white chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, use an electric mixer to beat the softened butter and brown sugar together until light and fluffy (about 2-3 minutes).
  3. Crack the eggs into the bowl, add the vanilla extract, and mix until well combined.
  4. In a separate bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, all spice, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
  5. Fold in the rolled oats, raisins, and white chocolate chips using a spatula. Be careful not to overmix.
  6. Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto a parchment-lined cookie sheet, leaving enough space between them to allow for spreading. Bake in the preheated oven for 10-12 minutes.
  7. Once baked, let the cookies cool on the cookie sheet for 5 minutes before transferring them to a wire rack to cool completely.

  • Chill the dough for 30 minutes for thicker cookies.
  • Don’t overbake; cookies will firm up as they cool.
